Garlic bread is hands down one of the best types of bread known to mankind! It’s one of the simple pleasures that life has to offer. It’s buttery, garlicky, cheesy, and in this case, slightly tangy from the homemade sourdough. This cheesy garlic bread recipe is the perfect accompaniment to your spaghetti bolognese, a nice juicy steak, a hot bowl of tomato soup, or any of your favorite comfort foods!
Tips For Making:
- Homemade sourdough: While you certainly do not have to use homemade sourdough bread, I definitely recommend trying it out. Homemade sourdough bread is free of additives and preservatives which makes a big difference not only in how it metabolizes in the body, but also in the overall flavor and quality of the bread.
Homemade sourdough is also great for digestion. If you are struggling with traditional gluten and bread, I recommend trying out sourdough as it is long fermented and because of that, the gluten in the bread is broken down and healthy probiotics are curated in the bread.
Sourdough also adds a slight, pleasant “tanginess” to your garlic bread, creating a complexity of flavors which complement one another nicely.

Grass-fed butter is not only more flavorful, but also high in Vitamin K, which is an essential nutrient that the body needs in order to function efficiently.
- Low hydration mozzarella: Using a lower hydration fresh mozzarella is best. Oftentimes if a high hydration mozzarella is used, it will make the bread soggy. Therefore make sure that you are using a lower-hydration mozzarella cheese in order to get the traditional stringiness and flavor of mozzarella cheese without the “sogginess”.
- Fresh garlic and garlic powder: Adding both fresh garlic and garlic powder makes for a super flavorful garlic bread.
- Bake until golden: Baking the bread until it is golden around the edges and bubbling will give you a crispy, yet soft garlic bread, and add additional flavor.
Can I Freeze Cheesy Garlic Bread?:
You definitely can freeze cheesy garlic bread! I recommend spreading the butter on your bread and then placing the unbaked bread into a freezer-safe Ziploc bag before placing it into the freezer. You can freeze the garlic bread for up to three months. Once you are ready to bake the bread, simply remove the loaf from the freezer and add the mozzarella and parmesan cheese, then place it in the oven and bake as usual. If the bread is fully frozen, you may need to add an additional 3-5 minutes of bake time.
How to Store Cheesy Garlic Bread:
The best way to store cheesy garlic bread is by simply just placing it in a Ziploc bag. It will store for up to 2 days. You can either eat it at room temperature or reheat it in the oven for 2-3 minutes at 425°F.
How To Make Cheesy Sourdough Garlic Bread:
Preheat the oven to 425° F.
Begin mashing one stick of salted butter. If you are not using salted butter I recommend adding salt to your butter mixture to enhance the flavors.
Add one teaspoon of garlic powder to the butter.
Mince, and using the side of the knife, crush 2 cloves of garlic and add it to the butter and garlic powder.
Next, finely chop up your fresh herbs. I like to add parsley and rosemary to my garlic bread, but you can add any of your favorite herbs.
Cream the herbs, garlic, and butter together using a rubber spatula.
Slice your sourdough bread horizontally in half.
Evenly spread the garlic herb butter across both sides of the bread.
Add the shredded or sliced mozzarella and a sprinkling of parmesan cheese.
Place the bread on a sheet pan lined with parchment paper and bake for 12-15 minutes or until golden brown around the edges and the butter is bubbling.
Allow the bread to rest for 5 minutes before cutting into it. This will not only allow it to cool down, but also allow all of the flavors to meld together.
